Bacon cheeseburger tacos
Big Mac-style tacos
Ingredients
Serves 4
- Hard or soft corn taco shells (either ready-made, or I made my own using using masa flour)
For the filling - 250g beef mince
- 3 rashers bacon
- 1 small onion, peeled and diced
- 1 tbsp soy sauce
For the sauce - 1/2 small onion, finely chopped
- 150g mayonnaise
- 30g ketchup
- 30g mustard
- 2 tbsp white wine vinegar
- 1 tsp sugar
- 2 tbsp chopped pickles, along with 2tbsp of the brine from the jar
- 1/2 tsp smoked paprika
Optional toppings- cheese slices
- shredded lettuce
- gherkins
- tomatoes and cucumbers, diced
- sesame seeds
Method
- Mix all of the sauce ingredients together and leave to sit to allow the flavours to combine.
- To make the filling, cut the bacon into small pieces and fry in a pan for a few minutes. Then add the diced onion and continue to stir through while the onion softens.
- Add the minced beef to the bacon and onions and stir until the meat is cooked. Add the soy sauce and then season to taste.
- Prepare the tacos.
- Taste the sauce and season if necessary.
- Cut the cheese slices in half to make two triangles and place on either side of the taco shell. You can put these in the oven for a minute or two to melt the cheese, if you like.
- Layer the lettuce and gherkins, then spoon some of the beef filling into the taco shell. Top with the burger sauce, the diced cucumber and tomato and a sprinkling of sesame seeds.
- Alternatively, put everything out on the table and allow people to build their own tacos. I recommend serving with napkins or paper towel, as these get messy!
