Korean tacos – Bulgogi beef tacos

Ingredients
– 500g beef mince
– 1 onion, chopped
– 2 cloves garlic, peeled and chopped
– 1 tbsp mince ginger
– 1 carrot, peeled and grated
– 6 tbsp soy sauce
– 2 tablespoons rice wine vinegar
– 1 tbsp brown sugar
– 1 tsp ground black pepper

To serve:

  • taco shells
  • gochujang sauce
  • Kewpie mayonnaise
  • shredded lettuce
  • sesame seeds
  • spring onions, chopped

Method
1. Heat oil in a large pan and cook the onion, garlic and ginger until fragrant and slightly softened.
2. Add the mince to the pan and brown through, then add in the grated carrot.
3. Mix in the soy, vinegar, sugar and pepper and simmer Goethe for 3-4 minutes. Taste and adjust seasoning to your preference.
4. Cook the taco shells according the instructions on the packet.
5. Serve the bulgogi mince with the taco shells, Gochujang, mayo, shredded lettuce, sesame seeds and spring onions and let everyone build their own.
